In my near decade of writing here, I don’t think I’ve ever posted an alcoholic drink. It seems a little out of place on a site dedicated to…well, babies, but after tasting this I knew I’d make an exception. Moms and dads can have a cocktail once in a while, and dadgummit, it should totally be this one.

I made a pitcher of these for our Memorial Day party and it was GUZZLED. Seconds and thirds…can you make another batchwhat is the recipe…this goes down WAY too easily!

The difference between this recipe and others I’ve tried is that you infuse the simple syrup with blackberries. Tons of blackberries. It makes a huge difference in the flavor. I had some simple syrup leftover from this batch, so I froze it for next time.

Blackberry Mojitos
You can use frozen blackberries (cheaper) for the simple syrup. In the actual glass, use fresh. Store any unused simple syrup in the fridge or freezer for later.

BLACKBERRY SIMPLE SYRUP
4 cups frozen/fresh blackberries
2 cups sugar
2 cups water (1 1/2 cups if using frozen blackberries)

SINGLE BLACKBERRY MOJITO
5 blackberries
3 mint leaves
2 oz rum
1 oz blackberry simple syrup
2-3 slices lime
Club soda to the top
lime wedges and mint for garnish

TO MAKE A SMALL PITCHER (double for large)
10 oz white rum
4 or 5 sprigs of mint with leaves
5 oz blackberry simple syrup
1 to 2 limes
1 cup of blackberries
club soda to the top
lime wedges and mint for garnish

Simple syrup
Put blackberries, sugar and water into a medium pot and bring to a boil. Turn the heat down to medium and simmer for at least an hour or until the mixture reduces and starts to thicken up just a little. Set aside to cool.

Mojito
To make a single mojito, add the blackberries, rum, lime and mint to a glass and muddle (smoosh with a spoon) well. Next add the blackberry syrup and give it a little stir. Fill the glass with ice and then to the top with club soda. Stir well, garnish with a lime wedge and a sprig of mint and serve.

To make a small pitcher of mojitos, add the blackberries, lime, rum, and mint to a pitcher and muddle it well. Add the blackberry syrup and give it a good stir. When you are ready to have a cocktail, fill a glass with ice, pour 4 oz of the mixture into the glass, top with club soda, garnish with a lime wedge and sprig of mint and serve.
